Red Velvet/Marshmallow Sandwich

Hello Sweets!

I love sandwiches! Something about them makes me feel complete when eating a meal.

My first attempt at red velvet, cookie sandwiches was quite a success! I put together one of my favorite cupcakes, with my favorite fruit dip and Voila! Sugary delightfulness! Try it out!

Cheers!

Red Velvet/Marshmallow Cookie Sandwich

Ingredients:

Red Velvet Cookies -

  • 1 box Red Velvet Cake Mix - Moist Delux (I used Duncan Hines)
  • 1/3 cup Applesauce (a healthy alternative to oil) ;)
  • 2 Eggs
  • 2 capfuls Vanilla Extract
  • 1 package Chocolate Chips
Marshmallow Filling -

  • 1- 8 oz. package Whipped Cream Cheese
  • 1- 8 oz. package Marshmallow Cream
  • 1/4 cup Powdered Sugar
  • 2 capfuls Vanilla Extract
Directions:

Pre-heat oven to 350 degrees

Red Velvet Cookies -

  • Combine cake mix, eggs and applesauce together
  •  Add your 2 capfuls vanilla extract
  • Mix in your chocolate chips (amount to your own liking)
  • Drop your cookie dough onto your sprayed pan (sizing depends on if you like large cookies or smaller cookies)
  • Bake each tray for 7 minutes - do not bake cookies thoroughly - they need to be nice and gooey when they are taken out of the oven!
Marshmallow Filling -

  • Combine cream cheese and marshmallow cream until smooth and creamy
  • Add powdered sugar slowly and to your taste preference
  • Add in vanilla extract
  • Combine until smooth and chill for at least 2 hours
    • The longer you wait, the better it tastes! ;)
Once your cookies have chilled, frost and put together to create a delectable sandwich!

Enjoy!
